With a special love for extra virgin olive oil and its extraordinary qualities, chef Tano Simonato has developed a philosophy of the type of cuisine he intends to create: the goal is to give lightness, elegance and digestibility to the preparations and the tool to do so is precisely extra virgin olive oil, combined with cooking aimed at enhancing the potential and nutritional properties of the foods.
In 2008 he received the Michelin star and many other awards including Best Restaurant in the World for A.I.R.O. (International Association of Oil Restaurateurs).
In his splendid new restaurant his famous statement is more valid than ever:
