A rare and innovative masterpiece of contemporary enology, “UnderWaterWines” by Jamin Portofino offers one of the most unique Champagne experiences ever created.

This Limited Edition, consisting of 1,500 individually numbered bottles, is part of a batch of 3,000 submerged in April 2018 at a depth of 52 meters in Cala degli Inglesi, within the Portofino Marine Protected Area. The bottles underwent aging through Jamin’s patented underwater cellaring method, which takes advantage of the sea’s natural conditions-stable temperature, high pressure, and darkness-to create a slow, refined evolution of the wine.

Made from 100% Pinot Noir, grown in the limestone-clay soils of the Aube region in Champagne, France, this cuvée matures for 24 months on the lees with zero dosage and a very low sulfite content (<20 mg/L), followed by an additional 12-month underwater refinement. The result is an AOP Champagne - Zero Dosage of great elegance and minerality, with fine bubbles and notes of brioche, toasted nuts, and a delicate marine salinity from its time beneath the sea.
